Add Mrs. Wages Citric Acid to help ensure you have delicious canned tomatoes. Citric Acid is an essential ingredient when canning tomatoes because it raises the acidity and helps prevent risk of botulism.
To ensure safe acidity, add 1/2 teaspoon of citric acid to every quart of tomatoes (for pints, uses 1/4 teaspoon citric acid). Contents are in a 5 oz. bottle and will process approximately 50 quarts of tomatoes.
